Is it the weekend yet? I start getting a little giddy beginning on Thursday, by Friday (donut day in the office) I am beaming.
I planned a date night for this Saturday, Filet’s at Ruth’s Chris. I am dreaming about it nightly! So goes the life of a food lover.
What other things do I dream of? Well, glad you asked.
Sometimes I dream of being able to play hookie from work so I can watch Zombie movies all day.
Many times I dream of being able to eat three Cheesy Gordita Crunches at once…and I also dream that they are -5 calories a piece…
I dream about someone accidentally painting the whole inside of my house for free, and then accidentally throwing in a whole new set of wood floors too, then they feed my cats, then they mop the tiles, then they deposit 50,000 dollars into my discretionary funds… Come on, it could happen.
Ingredients

• 8 cups Chicken Broth, Low-Sodium
• 3 Tablespoons Olive Oil
• ½ whole Medium Onion, Diced
• 2 whole Red Bell Peppers, Diced
• 1-¾ cup Arborio Rice
• ¾ cups Dry White Wine, I used a Sauvignon Blanc
• Salt To Taste
• 5 ounces, fluid Goat Cheese (I used TJ's Double Milk Melange Cheese)
• ½ cups Grated Parmesan
Directions
Bring broth to a simmer in a medium pan. In a large skillet or dutch oven, heat olive oil over medium to medium-low heat. Add diced onions and cook until translucent, about 1 to 2 minutes. Add red peppers and cook for 8 to 10 minutes.
Add uncooked rice and stir for a minute or two, allowing it to be coated with the other ingredients.
Pour in wine and cook for a minute or two.
Now, start adding broth a cup to a cup and a half at a time, stirring gently and allowing each addition to absorb into the rice. Repeat for 25 to 30 minutes, or until the liquid is absorbed.
Next comes the cheese, glorious goat cheese! Now I know goaty cheese is not everyone favorite so feel free to replace it with your favorite – Monterey jack would be a great substitute.
And to really make it a show stopper, I saved the Pepper stems and added them for decoration. So adorable – and free.
